Vegan Blueberry Scones

Hey guys! So the other day I was having a crazy craving for blueberry scones. You know, those delicious little triangles of buttery blueberry goodness? Yeah, I wanted them bad. So after a bit of experimenting, I finally got the perfect combination.

-1 3/4 cups all purpose flour

-2 tspsย baking powder

-1/2 cup white sugar

-1 teaspoon salt

-1 cup fresh blueberries

-1 cup full fat coconut milk

-1 tsp vanilla extract

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Whisk together all dry ingredients.
  3. Add blueberries, coconut milk, and vanilla extract to form a sticky dough.
  4. Form dough into two balls and flatten into circles.
  5. Place dough in freezer.
  6. After about 15 minutes, remove dough from freezer and cut into triangles.
  7. Bake until golden brown.
  8. Eat all of them in one sitting. No? That’s just me? Okay.

  1. These look incredible! I love scones, and LOVE baking with blueberries. They burst so beautifully! I am so excited to try these with coffee! The coconut milk must give it an incredible taste!
