Hey Guys! I have been working like a maniac. After a slump last week, I’ve picked myself up (Thanks to a few facetimes with Morgan and a lot of peppermint tea). This is all to say… I’m back baby.
I’ve learning a bit of philosophy recently, and the main thing I’ve learned is that a Plate O’ cookies makes everything better… Okay, maybe I lied. Plato never said that. Nonetheless, This is a true statement and today I was ready to stuff my face with chocolate after my week of gloom.
I had tried ALL of the big vegan chocolate chip cookie recipes before. None of them were any good. I guess you can’t expect anyone to do your work for you, so today I bring you a Delicious, Awesome, Gooey, Chocolatey Chocolate Cookie Recipe from your girl, me.
Let get baking!
- 1/2 cup coconut oil
- 3/4 cup brown sugar
- 1/4 cup sugar
- 1 cup self-rising flour
- 2/3 cup chocolate powder
- 1/4 cup apple sauce
- 1 tsp vanilla
- 3/4 cup water
Preheat thy oven to 350F. Cream the coconut oil and sugar. Add the vanilla extract. Sift in your dry ingredients, and add wet ingredients until you have a mixture that will almost hold a shape. Roll (about 1/4 cups of) the mixture and cook them for twelve minutes.
Now, here comes the fun part. These cookies are good, but what makes them great is the jam. Drizzle on some raspberry preserves, get some tea, and you’ve got yourself a perfect afternoon snack.
Now I’m not going to say I’m your best friend, because Morgan has dibs. I’m just saying you’re going to be glad we virtually met. I wish you all good luck in your baking endeavors. If you try this recipe, let us know in the comments!
